Ingredients and Quantities
- 320 g (11 oz) penne pasta
- 250 g (1 cup) tomato purée
- 200 g (7 oz) smoked pancetta, diced
- 150 g (⅔ cup) fresh heavy cream
- 120 g (½ cup) vodka
- 1 white onion
- 2 tbsp extra virgin olive oil
- Salt to taste
- Fresh parsley, chopped (for garnish)

Step by Step Recipe
Peel and finely chop the onion. Dice the smoked pancetta into small cubes.
In a large frying pan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
Add the diced pancetta and cook for another 5 minutes, allowing it to release its flavor and become slightly crisp.
Pour in the vodka and let it simmer until the alcohol evaporates, about 2–3 minutes.
Stir in the tomato purée and let the sauce cook on low heat for about 10 minutes, stirring occasionally.
While the sauce simmers, bring a large pot of salted water to a boil. Cook the penne until al dente according to package instructions.
Once the tomato sauce has thickened slightly, pour in the cream and mix well. Let it cook for another 5–7 minutes so the flavors blend and the sauce becomes creamy.
Drain the penne and transfer it directly to the pan with the sauce. Toss to coat the pasta evenly.
Sprinkle with freshly chopped parsley, plate, and serve hot.
